Project objective:
The project consists in developing the process innovation in the innovative process of microwave pasteurisation, spray degassing of fresh NFC juices from domestic fruit for aseptic bottling, as well as the construction and validation of a dedicated innovative pilot line to enable to manufacture NFC juice with a long shelf life, improved sensory and nutritive parameters when compared to the NFC juices available on the market. The developed process and the pilot line reflecting it will enable the applicant to ensure higher reduction of oxygen as well as native tissue enzymes in juices which will translate into reduced oxidation and degradation of active substances and, consequently, into longer maintenance of the juice nutritional values. The process parameters will be selected and optimised based on many physico-chemical, sensory and microbiological analyses carried out for the drink samples during simulation and process tests on individual key sub-systems of the new technology in conditions close to the real ones. The obtained knowledge will be used to design the final process version for every analysed juice type and applied to the prototype of the unique pilot line, tested and validated in the scale close to the real ones. A manufacturing line prototype will comprise a spray degasser, a unit for continuous-flow microwave pasteurisation, juice mixing system, aseptic bottling system, blow moulding of unit packagings (PET bottles) directly before bottling the juice and an advanced in-house logistics and order picking system.
Anticipated project results:
The project will result in an innovative process which will enable to market pressed purée juices (not from concentrate) with longer sensory durability, maintaining the most visual, taste and olfactory values and health-promoting substances possible.
